Mushrooms are not everyone’s favorite food, but many of us love them. Why make more mushroom food? Mushrooms contain antioxidants that boost the immune system. They also contain natural antibiotics that inhibit the growth of microbes. Most mushrooms are an excellent source of riboflavin, potassium, copper, thiamine, vitamin B3, and folic acid. This would justify the inclusion of mushrooms as a superfood.

Chicken Stroganoff
Ingredients
- 1 lb. chicken breasts
- 2 Tbsp. vegetable oil
- 2 medium onions
- 1/2 lb. mushrooms 2 c., thinly sliced
- 1 Tbsp. cornstarch
- 1/8 tsp. pepper
- 2 Tbsp. water
- 1 8 oz. pkg. yogurt
- hot cooked noodles
- 1 tsp. minced garlic
- 1/2 cup chicken broth
Instructions
- Slice chicken into thin strips.
- In a large skillet over medium heat, heat 1 tablespoon vegetable oil. Add onions.
- Saute 2 minutes.
- Add mushrooms and saute 3 minutes longer.
- Remove vegetables from skillet; reserve.
- Heat remaining oil in skillet. Add chicken and garlic.
- Cook as for stir-fry. Return vegetables to skillet.
- Add broth and pepper.
- In a small bowl, combine water and cornstarch.
- Stir into skillet mixture. Over medium heat, bring to a boil and boil 1 minute, stirring constantly. Remove from heat and stir in yogurt.
- Heat gently over low heat (do not boil).
- Serve over noodles.
Chicken stroganoff is one of my personal favorites. Anything made stroganoff style is delicious, but combining chicken with mushrooms and yogurt is going to be a hit. It takes a little longer to make but it still makes a family dinner in 30-40 minutes.

Beef Stroganoff
Ingredients
- 1 lb. ground beef
- 1 pkg. dry onion soup mix
- 1/2 tsp. ginger
- 3 cup medium noodles
- 1 can sliced mushrooms 3 oz.
- 3 cup hot water
- 2 Tbsp. flour
- 1 cup sour cream
Instructions
- Sprinkle onion soup mix and ginger over meat. Arrange layer of noodles over meat and add mushrooms.
- Pour water over noodles.
- Cook on low 20 minutes.
- Blend flour into sour cream and add to stroganoff.
- Cook 3 minutes.
For a really substantial and filling meal, make the beef stroganoff. A little added ginger spices up the flavors.

Creamy Chicken And Mushrooms
Ingredients
- 2 Tbsp. margarine
- 4 skinless, boneless chicken breast halves
- 1 1/2 cup sliced mushroom
- 1 small onion sliced
- 1/8 tsp. garlic powder or 1 clove garlic minced
- 1 can cream of mushroom soup 10 3/4 oz.
- 1/2 cup milk
- 2 Tbsp. dry sherry optional
- 1/8 tsp. pepper
Instructions
- In skillet, in 1 tablespoon hot margarine, cook chicken 10 minutes or until browned on both sides.
- Remove.
- In remaining 1 tablespoon hot margarine, cook mushrooms and onion with garlic powder until tender and liquid is evaporated (stirring often). Add remaining ingredients.
- Heat to boiling.
- Return chicken to skillet.
- Cover; cook over low heat 5 minutes or until chicken is no longer pink, stirring occasionally.
This saucy, mushroomy chicken is sure to be loved by all and will have you licking your fingers. You can also serve it with pasta or vegetables, all the juices will flavor everything.

Stuffed Mushrooms
Ingredients
- 1/2 to 3/4 lb. bacon lean bacon
- 8 oz. cream cheese
- 12 oz. pkg. mushrooms large caps preferred
- 1 tbsp seasoned salt
Instructions
- Leave cream cheese out to soften.
- Microwave or fry bacon until crisp.
- Drain.
- Wash and dry mushrooms on paper towels. Remove stems, leaving just the caps.
- Crush bacon in cream cheese and mix together.
- Add seasoned salt, just enough so you can taste it in the mixture.
- Stuff mushroom caps with the cream cheese mixture.
- Put under broiler and broil for 3 minutes, until cream cheese is browned on top.
This is one of my favorite dinners. If I buy nice big mushroom heads, it’s the easiest, because you can fill up two or three and you’re well fed. But for a family table or as a guest dish, fill smaller mushrooms and it’s really cute.

Mushroom Rice Casserole
Ingredients
- 1 can cream of mushroom soup
- 1 small can sliced mushrooms
- 1 cup broken pecans toasted
- 1/2 cup melted butter
- 1 cup rice
- salt to taste
- 1 tsp. nutmeg
Instructions
- Mix in butter and nutmeg.
- Mix mushrooms with soup and salt to taste.
- In casserole, alternate soup and rice, ending with soup.
- Bake at 350 F for about 20 minutes.
- Add toasted pecans before taking from oven.
This is an amazingly simple mushroom recipe that can be used as a side dish or as a meal. Very easy to cook and sure to be enjoyed by all. Crunchy pecans give a real taste experience.

Mushroom Meatballs
Ingredients
- 2 can cream of mushroom soup
- 1 1/2 lb. ground beef
- 1/2 cup fine dry bread crumbs
- 1 small onion minced
- 1 Tbsp. parsley
- dash of Worcestershire sauce
- 1 egg slightly beaten
- 1 cup water
Instructions
- Measure out 1/4 cup soup.
- Combine this with next 6 ingredients. Shape into meatballs. Brown in nonstick frypan. Blend rest of soup with water.
- Pour over meatballs.
- Cook over low heat 10 minutes. Stir. Serve with noodles or rice.
Don’t just make simple meatballs, make mushroom ones. You can make them healthier and more special.

Mushroom Burgers
Ingredients
- 6 to 8 hamburger patties
- 1 pkg. onion soup mix
- 1 jar mushrooms
- 1 1/2 cup hot water
- 4 bouillon cubes
- Swiss cheese
Instructions
- Brown patties in skillet.
- Pour off grease.
- Dissolve bouillon in water and pour over patties along with soup mix and mushrooms. Simmer for 30 minutes.
- Serve on bun with slice of Swiss cheese.
A juicy burger than this? Yeah, put some mushrooms on it. You can even put a bun in the sauce, believe me, it’s worth it.

Round Steak And Mushroom Gravy
Ingredients
- 1 round steak
- vinegar
- salt and pepper
- flour
- oil or butter
- 1 can cream of mushroom
- 1 can water
Instructions
- Pat round steak with vinegar.
- Salt and pepper.
- Beat with mallet or side of metal lid.
- Let it stand for about 1/2 hour. Cut into serving size pieces.
- Pat with flour.
- Fry slowly in oil until brown.
- Pour off oil.
- Add cream of mushroom and water. Cover and cook slowly until it is tender.
This is an elegant but easy food. Whether on a date or with gourmet friends. The steak is complemented perfectly by the mushroom gravy flavor. You can serve it with colorful vegetables for a healthier meal. Don’t forget to choose a fine red wine to go with it.

Potatoes And Mushrooms
Ingredients
- 8 to 10 small new potatoes
- 1/4 cup butter melted
- 2 Tbsp. green onions or chives chopped
- 1/2 lb. mushrooms chopped
- 1 cup meat stock
- 2 egg yolks
- 1 tsp. lemon juice
- salt and pepper
Instructions
- Cook potatoes in jackets until tender.
- Drain and dry.
- Place in a casserole, adding butter and chopped onion.
- Beat egg yolks and add lemon juice, mushrooms and meat stock.
- Season with salt and pepper.
- Pour over potatoes in casserole.
- Bake, uncovered, in preheated 350 F oven for 30 to 40 minutes.
The mushroom potato is a simple one-dish meal, yet it has a special flavor. You can even cook it in a slow cooker and it’s an easy and tasty, warm meal.

Pork Chops With Cream Of Mushroom Gravy
Ingredients
- 4 pork chops with or without bone
- 1 can cream of mushroom soup
- 1/4 can milk
- garlic and salt
- pepper
Instructions
- Brown and season pork chops with garlic salt and pepper.
- Add cream of mushroom soup and milk.
- Mix well in pan.
- Simmer until pork chops are done.
- Approximate cooking time: 35 minutes.
- Serve with gravy over rice (my favorite) or potatoes.
