Greek Mediterranean Marinade for Chicken, Beef or Vegetables
This simple and versatile classic marinade provides meats or vegetables with an oregano and garlic-based flavor that goes well with chicken, beef, onions, potatoes, peppers, mushrooms and many other ingredients. And it’s flexible too; add basil, thyme, rosemary or even red pepper flakes to jazz it up.
Enough for about 1-2 lbs. of meat or veggies.
- Olive Oil - 1/2 cup
- Lemon Juice - 1 Tblsp. (from 1/2 lemon)
- Oregano - 1 Tbsp or more, dried or fresh
- Garlic - 3 cloves, minced
- Onion Powder - 1 tsp.
- Salt - 1/2 tsp.
- Black Pepper - 1/4 tsp.
- Blend all ingredients welll with a whick or fork.
- Add meat and/or vegetables and mix well to coat thoroughly. Marinate up to 24 hours, refrigerated.
