Corn and black bean salad served as a cool summer main dish.
Like really good jazz, this is one of those improvisational dishes, where you have a basic rhythm/ingredients — beans and corn and a simple vinaigrette — and creatively add ingredients for color, texture and taste, and availability if you don’t have time to go shopping.
I had a lot of leftover corn on the cob and a can of beans and decided to try a black bean and corn salad. I found a delicious-looking recipe at Chaos in the Kitchen and made a few changes based on what I had in the house, and the result was a tasty combination of crunches (fresh bell and jalepeno peppers) and soft but firm (beans and corn) with a subtle background flavoring of tomatoes, onions, cumin and lime juice.
Use frozen corn, canned beans and jarred salsa to make this delicious salad in about 10 minutes. You can also use fresh-roasted corn, home-made salsa and home-cooked beans, left-over or not, and it’s still easy and assembles quickly.
It’s a great colorful side for parties; it can be prepared well in advance, and can be served cold, room temperature, or even heated up — talk about easy-going!
Ingredients
- Corn - 3 cups, cooked from fresh, or frozen or canned
- Black Beans - 1 (15-oz.) can, rinsed and drained (or 1-2 cups, cooked)
- Red Bell Pepper - 1, chopped (or any type of bell pepper)
- Jalepeno Pepper - 1-2, chopped (deseed for milder spice)
Dressing
- Olive Oil - 1/4 cup
- Rice Vinegar - 1 Tblsp (or substitute any vinegar)
- Lime Juice - 2 Tblsp.
- Garlic - 2 cloves, minced
- Oregano - 1 1/2 tsp.
- Cumin - 1 1/2 tsp.
- Salsa - 1/2 cup - make your own, or prepared (or use 1 tomato, chopped)
- Cilantro - 2-3 Tblsp., fresh, chopped
- Salt - 1/4 tsp.
- Black Pepper - to taste
- In a large bowl, combine dressing ingredients olive oil, vinegar, lime juice, garlic, oregano, cumin, salt and pepper and blend well.
- Add salsa and cilantro and blend well.
- Add beans, corn and peppers and mix thoroughly.
- Refrigerate for 2 hours or more.
- Serve chilled or at room temperature. (Tastes very good heated up too).
