Easy Blueberry Crisp
It’s blueberry season and blueberries are my all-time favorite fruit, so when I saw this beautiful and easy recipe at Inn Cuisine, I knew I had to try it. With pineapple, blueberries, cake mix and walnuts added in layers, it’s an unusual method, and I was curious how blueberries would pair with pineapple.
It definitely works. I served it at my 4th of July get-together and everyone loved this blueberry walnut crumble (or is it a crunch?). It’s not too sweet; the blueberry flavor is most predominant and the texture is a perfect blend of crunchy topping and soft fruit.
The prep time is only about 10 minutes if all of your ingredients are assembled. I’ve simplified the recipe a bit and it is extremely easy to put it all together.
- Pineapple - 1 (16 ounce) can, crushed (Do not drain. the original recipe calls for unsweetened but I mistakenly bought it in light syrup and it worked fine)
- Blueberries - 3 cups (2 pints fresh, or you can use frozen, not thawed)
- White Sugar - 1/4 cup
- Brown Sugar - 1/4 cup, packed
- Lemon Juice - 2 Tblsp.
- Yellow Cake Mix - 1 box
- Butter - 1/2 cup, melted
- Walnuts - 1 cup, chopped
- Preheat oven to 350 degrees.
- Spray a 13″ X 9″ baking dish with oil.
- Pour entire can of pineapple (yes, including liquid) into the pan and spread evenly.
- In a small bowl, mix blueberries with white sugar and lemon juice to cover completely.
- Pour blueberry mixture evenly on top of pineapple.
- Pour cake mix (yes, dry) on top, evenly. It’s weird, but it works.
- Drizzle butter over the cake mix.
- Add walnuts and brown sugar evenly on top.
- Bake for 20 minutes and then poke holes in the cake with a butter knife. Poke all over the cake - around 30 times, to allow the juices to bubble up and mix with the dry cake mix.
- Cook for another 30-40 minutes, or until the top is a nice deep brown. You might notice that there is still some dried cake mix on top but it seems to blend with the blueberry mix as it cools.
- Serve warm or at room temperature.
This blueberry crumble is amazingly delicious as is, or top with whipped cream or vanilla ice cream.
