Caramelized Onions and Mushrooms
If you like the rich taste of onions combined with the earthy taste of mushrooms, this caramelized onions and mushrooms recipe will be a valuable addition to many of your standard dishes, such as pizza, crustini, or hamburgers. Some recipes use sugar but I prefer relying on the sweetness of the onions.
- Onion - 1 cup, choppedĀ or sliced
- Mushrooms - 1 10-oz. package, sliced
- Garlic - 2 cloves, minced finely (optional but recommended)
- Olive Oil - 3 Tblsp.
- Butter -3 Tblsp.
- Melt olive oil and butter in a large frying pan.
- Add onions; they should be well covered by the melted butter/olive oil mixture. If they aren’t, add more butter and/or oil.
- Stirring often, cook over medium heat until mixture bubbles.
- Lower heat slightly so there are still some bubbling; stir frequently and cook for about 5-7 minutes, until onions are getting soft and turning brown.
- Add garlic and mushrooms. If the mixture seems dry, add another tablespoon each of butter and olive oil.
- Continue cooking and stirring on low heat, for another 10 minutes or so, until the mushrooms are soft and brown and the onions are very brown and the sauce is thick and brown like… you guessed it, caramel.
- Remove from heat and use immediately or save for later.
